Balsamic Grilled Veggie & Goat Cheese Sandwiches

Now I’m a carnivore through and through, but lately we have been partaking in #MeatlessMonday whenever we can. It’s not only a way to reduce our meat intake and save money, but it allows us the opportunity to try some fun, new veggie-forward recipes.

The prime example for said recipes are these balsamic grilled veggie & goat cheese sandwiches. I am quite literally obsessed with them, they are so darn good. Using some of my favorite veggies marinated in jammy balsamic vinegar and olive oil, the grilled veggies are the star of this sandwich and you won’t miss the meat in the slightest.

It also doesn’t hurt that these gorgeous grilled veggies are accentuated by buttery, perfectly toasted ciabatta buns and garlic and herb goat cheese for a tangy, creamy finish. Upon first bite, you are bound to fall in love and include these in your Meatless Monday rotation on the reg.

Balsamic Grilled Veggie & Goat Cheese Sandwiches

Makes 4 sammies

Ingredients

  • 2 Portobello mushrooms

  • 1 bunch asparagus, rough ends trimmed off

  • 1 red onion, sliced into 1/4 inch rings

  • 1 bell pepper, cut into 4 large pieces

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon Kosher salt

  • 1/2 teaspoon black pepper

  • 4 Ciabatta buns

  • 2 tablespoons butter

  • 4 oz garlic and herb goat cheese

Directions

In a large shallow dish, marinate veggies in olive oil, balsamic vinegar, salt and pepper, tossing to coat. Marinate for at least 15 minutes and set aside at room temperature.

Heat a grill or grill pan to medium high heat. Grill/cook veggies for 3-4 minutes a side until caramelized and just cooked through. Remove from heat and set aside.

Heat a cast iron skillet over medium heat. Butter both sides of Ciabatta buns and toast for 2-3 minutes, until golden brown. Remove from heat and cool for a minute or two. Spread 1 oz of goat cheese on the bottom of each bun. Layer veggies - onions first, followed by asparagus, red pepper and mushrooms. Smoosh together and enjoy!
