Garlic Herb Roasted Fingerling Potatoes
If you ask me, roasted potatoes are such an underrated side dish. Call me a classic meat and potatoes gal, but I adore a simple yet delicious potato and veggie to compliment some succulent meats.
These garlic herb roasted fingerling potatoes are the perfect, classic “meat and potatoes” side dish . Pair them with some grilled asparagus or other seasonal veggies, chicken, steak, pork or even fish and it’s a well-balanced meal. The best part is these fingerling potatoes look elevated with their gorgeous, golden brown coloring and those chunks of garlic and herbs, but the reality is they take no time at all to toss, roast and enjoy.
Garlic Herb Roasted Fingerling Potatoes
Ingredients
1 1/2 pounds fingerling potatoes, sliced in half lengthwise
2 tablespoons melted butter
2 tablespoons extra virgin olive oil
4 cloves garlic (about 1 heaping tablespoon), minced
1 tablespoon Italian seasoning or herbes de provence
1/2 teaspoon salt
1/2 teaspoon freshly cracked black pepper
Directions
Combine all ingredients together in a large bowl until potatoes are evenly coated. Roast in a 425 degree oven for 20-25 minutes. Enjoy!
