Umami Roasted Broccoli
If you know me and you know my food, chances are you are quite familiar with blasted broccoli. Hardly a week goes by where we are not making blasted broccoli as a quick, easy and most delicious veggie side dish. Whether it’s served alongside some grilled chicken or with some mac and cheese (homemade or Annie’s, let’s be real), blasted broccoli is a Hungry Ali staple!
While blasted broccoli is perfect as is with the most simple of seasonings, I tested something out on my blasted broccoli technique that truly rocked my world, and I know it will for you too. Instead of dressing with olive oil, salt, pepper and red pepper flakes, I jazzed up my broccoli with two umami flavor boosters: soy sauce and fish sauce.
It’s really as simple as that - two simple pantry ingredients happen to do wonders to broccoli when blasted in the oven, created caramelization like never before. The result is salty, slightly sweet and a lil’ funky for a perfect umami bite.

Umami Roasted Broccoli
Ingredients
1 bunch of broccoli, cut into bite-sized florets
1 teaspoon soy sauce
2 teaspoons fish sauce
1 tablespoon avocado oil
Squeeze of fresh lime juice (optional)
Directions
Preheat oven to 425 degrees. On a sheet pan, toss broccoli pieces with soy sauce, fish sauce and avocado oil. Roast for 20-25 minutes until crispy and caramelized. Serve on a platter with a squeeze of lime juice, if you like.
