Better-Than-Chipotle Guacamole
I'm just going to come right out and say it. Am I the only one who's bent out of shape about this whole Chipotle fiasco #romainegate? I know I'm probably being a little paranoid, but I just can't bring myself to go yet. Hence why I'm finding myself in a dark state of depression, because no burrito bowls and no guac. It's been really hard, you guys.
It's a good thing I can make a mean guacamole, though. Some might say even better than certain Tex Mex restaurant chains. Sorry, Potle.
Forget those guacamole packets. Making your own guacamole is as simple as mashing avocados and blending with a few simple ingredients. Grab yourself a good, salty tortilla chip, a beer, turn on some Red Zone and you're all set. Just fair warning, the guac is likely to disappear quickly!
Did I mention it's quick and easy? Well, of course it is. And you bet your bottom dollar it’s even better than Chipotle!
Better-Than-Chipotle Guacamole
Ingredients:
4 large avocados, halved, seeded and peeled
Juice of two limes
1 red onion, finely chopped
2 teaspoon cumin
1 teaspoon salt
1/2 teaspoon pepper
Directions:
Place avocado halves in a large bowl and immediately add lime juice and toss to coat. Add red onion, cumin, salt and pepper and, using a fork, starting roughly mashing guacamole to desired consistency. I prefer mine just slightly chunky, but not too chunky. Certainly not super creamy! Once it has reached desired consistency taste for seasoning and add more salt and pepper, if needed. Serve with chips or on your favorite Tex Mex foods.
