I feel like kale has had its moment, and then some. Kale this, kale that. We get it already, kale! 

And just when I thought I was over it, I had some wacky idea last week to not only buy a bunch of beautiful looking dinosaur kale at the store, but try a new recipe that has become my new favorite veggie side dish to date. 

I'm not kidding, you guys. I'm kind of obsessing here. Who knew kale could be so good??

I'll tell you what sort of crazy magic happens to kale when you add lemon and garlic. Kale, super rich, super bitter, becomes softer, slightly sweeter from a hot sear in a pan. Then aromatic, savory garlic slices, paired with tangy, vibrant lemon just seal the deal. It's so good that the first time I made it, we may or may not have polished off the whole bunch. 

And you all know how I'm a fan of a super simple recipe. This one might take the cake! 

I can't recommend this recipe enough. Not only is it simple to make and good, but it's good for you! Serve it with some grilled chicken, baked pork chops or steak. This kale is going to steal the show. 

Lemon Garlic Kale

Ingredients:

  • 1 bunch dinosaur kale, roughly chopped

  • 1 tablespoon olive oil

  • 2 garlic cloves, sliced thinly

  • Juice of half a lemon

  • Salt and pepper, to taste

Directions:

In a large skillet or wok, heat oil over medium high heat. Add kale and saute for about 3 minutes, until kale begins to wilt slightly. Add garlic and squeeze lemon juice over kale and stir to coat kale. Cook for an additional 1-2 minutes until kale becomes tender and fragrant. Serve immediately.
