Summer Market Salad

Like most people, I seriously missed dining out at restaurants during the pandemic and am absolutely elated that dining out is coming back! Sure, I missed things like the vibe of dining out and trying new dishes. But truthfully, I missed dining out because it’s my #1 way to get recipe inspo!

Take this summer market salad for example. We recently took a trip to Santa Cruz to visit family and dined at the fabulous Barcolenata (pronounced Bartholenta, of course). We feasted on tapas, paella, sangria and churros until our bellies were full and happy. Truly a dining out event to remember!

While every bite was to die for, believe it or not, it was this summer market salad we ordered that I could not stop thinking about. Bright, fresh and full of texture, this summer market salad featured lettuce, green beans, corn, feta, crushed pita chips and a za’tar, lemon vinaigrette. The whole time I was eating it I kept imagining how to recreate this perfect summer salad at home.

So here we are all but a few days later and I’ve recreated it! With every bite, I’m transported back to our night out at Barcolenta. It’s hearty enough for a meal in itself or great as a side to whatever you’re throwing on the barbecue. You’ll be hooked!

Summer Market Salad

Ingredients

  • 2 large handfuls (about 4 cups) spring mix greens

  • 1-2 cups fresh green beans

  • 1 cup fresh corn (cut from 1 corn cob)

  • 1/4 cup crumbled feta

  • Large handful garlic and herb pita chips, crushed

  • Maldon sea salt

Lemon Za’tar Vinaigrette

  • Juice of two lemons

  • 1 teaspoon Dijon mustard

  • 1 teaspoon za’tar

  • 1 shallot or 2 cloves garlic, finely minced

  • 1/4 cup extra virgin olive oil

  • Kosher salt and freshly cracked pepper

Directions

Fill a medium pot with water and bring to a boil. Drop your beans into the water and blanche for 3-5 minutes. Drain and immediately place in an ice water bath. Drain from the bath and pat dry. You can either refrigerate for at least 30 minutes before serving or set aside at room temp.

In a liquid measuring cup or lidded jar, whisk all vinaigrette ingredients together or close the lid and shake it off!

In a large bowl, add spring mix, green beans, corn and feta. Gently toss with za’atar lemon vinaigrette. Top with crushed pita chips and season with Maldon sea salt. Enjoy!
