Spicy Chicken Quesadillas
Fall is officially here and I am ALL about it! Rainy days, cozy slippers and leaning into all the pug snuggles are what I live for. That and all the cozy food that comes along with it!
Nothing feels as cozy to me as melty, ooey, gooey cheese. From grilled cheese to quesadillas, these foods just scream comfort to me!
Take this spicy chicken quesadilla for a prime example. For one, there’s no shortage of melty, delicious cheese like any good comfort food found in these ‘dillas. But these spicy chicken quesadillas are something special entirely because they feature my special green sauce from Peruvian chicken with green sauce recipe.
This sauce is so good, you could drink it with a straw. Creamy, spicy, garlicky and herby, it’s not only delicious on my Peruvian chicken (another recipe I highly recommend), but as a sauce to make these quesadillas even creamier and more indulgent. I like to think they resemble Taco Bell quesadillas (one of my guilty pleasures), only infinitely better.
Using whatever leftover chicken you have on hand or even going meatless, these quesadillas are downright cozy and good for the soul to kick off this fall season!
Spicy Chicken Quesadillas
Recipe for one quesadilla - repeat and increase quantities for more!
Ingredients
2 tablespoons green sauce from my Peruvian chicken with green sauce recipe
2 oz cooked chicken - rotisserie, shredded or leftover from my Peruvian chicken, to kill two birds with one stone! :)
1/4 cup shredded pepper jack cheese
8-inch tortilla
Small pat of butter
Directions
Heat a non-stick skillet over medium heat. Melt a small pat of butter and spread around in the skillet. Lay down tortilla and add half of cheese to one side of the tortilla followed by chicken, sauce and more cheese. Cook for about 2 minutes, until cheese starts to just melt, then fold over tortilla. Flip and cook for another minute until sides of tortilla are golden brown. Slice in half and enjoy!
