Shrimp Penne Alla Vodka

If you're with me and feeling the daylight savings hangover, you're in need of something quick and easy to throw together for what is sure to be a nutty week. And maybe something that will also help cure your end of winter blues and get you in the spring spirit? I have just the dish for you! 

This shrimp penne alla vodka is the perfect time-saving yet comforting dish. Throwing this together takes no longer than 30 minutes from start to finish and uses just a few simple ingredients.

And while the time-saving factor is all well and good, let’s be real: this is really all about the FLAVOR. The vodka sauce alone is worth licking your bowl clean for. It's bold, tangy, perfectly creamy yet surprisingly light. Subtle hints of warm spice and garlic add a much appreciated layer of flavor, along with bright, fresh basil that pair perfectly with shrimp. It's a dish you’ll easily want to eat and cook day after day!

Shrimp Penne Alla Vodka

Ingredients

  • 2 tablespoons butter

  • 2 cloves garlic, minced

  • 1 teaspoon red pepper flakes

  • 1 28 oz can crushed tomatoes

  • 1/4 cup fresh basil, chopped plus about 2 tablespoons for serving

  • 1/2 cup vodka

  • 6 tablespoons whipping cream

  • 1 1/2 teaspoons salt

  • 1/2 teaspoon black pepper

  • 1 pound peeled and deveined shrimp

  • 1 pound penne or the pasta of your choosing

  • Parmesan

Directions

Melt butter in a large skillet over medium high heat. Add garlic and cook for about 2 minutes, stirring frequently to not burn garlic. Add red pepper flakes and cook for another minute. Add crushed tomatoes and their sauce and 1/4 cup fresh basil and simmer for 15 minutes. Meanwhile, cook penne or pasta of your choosing in a large saucepan of salted water, following package directions. 

Increase heat to medium high heat and add vodka and whipping cream to tomato sauce, stirring to combine. Cook for 3 minutes to cook off alcohol. Season with salt and pepper. Add raw shrimp to tomato sauce and submerge. Cook for about 3 minutes until shrimp are pink and tender. Remove from heat. 

Add sauce to pasta and stir to combine. Serve in bowls with fresh basil and grated Parm. Enjoy!
