Mandarin Orange and Goat Cheese Salad

Rarely do I get excited about eating a salad. But when it’s as good as this one? Sign me up!

For when you’re craving a salad or just know you should eat one, you have to whip up one of my favorite salads made with mandarin oranges, goat cheese and almonds. Tangy goat cheese, bright mandarin oranges, creamy avocado, aromatic celery and green onions, and crunchy almonds all pair magically together with a sweet and ever so slightly spicy vinaigrette. With tons of texture, crunch and zip, it's the perfect everyday salad to reawaken your taste buds with clean, light and refreshing flavors.

Even better? It has “summer party side dish” written all over it so you can keep the good times rolling with this tasty, healthy salad. Enjoy!

Mandarin Orange and Goat Cheese Salad

Serves 2-3

Ingredients

  • 2 cups romaine

  • 1 cup arugula

  • 1 celery stalk, finely diced

  • 2 green onions, thinly sliced

  • 1 avocado, diced

  • 1/4 cup almonds, chopped

  • 1/4 cup crumbled goat cheese

  • 1 11 oz can mandarin oranges in light syrup, drained

  • 1/4 cup white balsamic vinegar

  • 1 tablespoon honey

  • 2 tablespoons parsley, chopped

  • 1 teaspoon sriracha

  • 1/4 cup olive oil

  • 1 teaspoon salt

  • 1 teaspoon black pepper

Directions

In a large salad bowl, gently toss together arugula and romaine. Distribute celery, green onions, almonds, goat cheese, almonds and avocado evenly over lettuces. Add balsamic vinegar, honey, parsley, sriracha, olive oil, salt and pepper to a jar with a lid. Secure lid and shake until well combined. Dress the salad to your liking and toss. Enjoy!
