Burgers with Blue Cheese Mayo, Jammy Onions and Arugula

While I am mostly a purist when it comes to my burgers (American/cheddar cheese, lettuce, tomato, onion, mayo and/or special sauce), there is something so indulgent and satisfying about a gourmet burger such as these.

With creamy, chunky blue cheese mayo that is practically a cheese sauce disguised as a mayo, toasted brioche buns, charred, juicy burgers, sweet and jammy red onions and peppery arugula, it creates for one perfect burger bite worthy of a celebration.

Burgers with Blue Cheese Mayo, Jammy Onions and Arugula

Ingredients

  • 1 lb 93% lean ground beef, formed into 4 equal sized patties (make sure to consider your bun size!)

  • 1 red onion, sliced into 4 thick slices

  • 1/2 cup your favorite BBQ sauce like Sweet Baby Ray's or Stubbs

  • 1/2 cup mayo

  • 1/4 cup good Gorgonzola or blue cheese, crumbled

  • 1/2 teaspoon Worcestershire sauce

  • 1/4 teaspoon hot sauce, like Tabasco or sriracha

  • Salt and pepper

  • Arugula

  • 4 brioche or pub buns

Directions

Combine mayo, crumbled blue cheese or Gorgonzola, Worcestershire and hot sauce together in a small bowl. Season to taste with salt and pepper. Refrigerate until ready to serve. This sauce/spread tastes even better with a bit of time in the fridge! 

Preheat a grill to medium high. Brush onions generously with barbecue sauce. Grill until onions are tender and golden, basting with BBQ sauce and flipping occasionally, about 15 minutes.

Season burger patties with salt and pepper on each side. Grill patties until cooked through, 3-4 minutes a side depending on your liking for doneness. Grill buns, cut side down, until lightly toasted, about 2 minutes.

To assemble, place bed of arugula on bottom halves of buns and top with patty. Top with one slice of barbecued onions. Spread blue cheese mayo generously on the top half of the bun, smoosh and enjoy!
