One of my favorite places for happy hour imbibing and nibbling is this funky little cocktail bar in Seattle called Oliver's Twist. Not only is the ambiance and decor super inviting - local artwork on the walls, plush cushions on booths, dim lighting and just that cool, non-pretentious neighborhood feel - but their drinks are stiff and their snacks are on point. Particularly, their garlic truffled popcorn. 

The garlic truffled popcorn is reason to go there alone. I mean with luxurious flavors like truffle and roasted garlic on hot, salted popcorn, how could that be bad in the slightest? If you’re not ordering a bag upon arrival, then you are making a serious mistake! In fact, order two upon arrival because it will disappear quickly along with your drink. The roasted garlic is sweet, slightly chewy and is found on nearly every morsel of popcorn. The truffle flavor is present and aromatic yet not overpowering. It's quite possibly the perfect happy hour snack. 

Which is why when I’m doing happy hour at home, you know I’m thinking about whipping up some garlic truffled popcorn! I'll admit my garlic truffled popcorn isn’t as great as the real deal, but it’s pretty darn close. And it’s still just as salty and indulgent of a snack to pair with your favorite adult beverage.

Garlic Truffled Popcorn

Ingredients

  • 1 bag of plain popcorn, such as Orville Redenbacher's Natural Sea Salt variety

  • 2 roasted bulbs of garlic - try this simple method here

  • 2 tablespoons salted butter

  • 2 tablespoons chopped parsley

  • 1 tablespoons truffle oil - either white or black is fine. It totally depends on your preference. I had black and it's definitely a more pungent truffle flavor while white is a bit more subtle.

Directions

Cook popcorn in microwave according to directions on package. Meanwhile, melt butter in a saucepan. Remove roasted garlic cloves from skin and chop roughly. Add chopped roasted garlic, parsley and truffle oil to melted butter and stir to combine. Remove bagged popcorn from microwave. Open bag and pour butter and garlic mixture over popcorn. Reseal bag and shake to combine. Serve straight out of the bag or in a bowl warm with a beverage of your choosing. Enjoy!
