We have a new weekend tradition in this here household that I have to say I'm a huge fan of: Seafood Saturdays! It happened by accident, I must admit. Cole and I, both avid lovers of all types of seafood, unintentionally started planning weekend dinners that involved some sort of seafood because it's a "special occasion." Something must have stuck, because it's become our new ritual. A pretty awesome one, I might add!

Even salmon or shrimp are our go-to’s when it comes to seafood, I do love shaking things up a bit. Like with this Asian-style grilled halibut.

Light in flavor yet firm and meaty enough to withstand a hot grill and bold flavors, halibut is the perfect seafood for this punchy, Asian-style marinade. Soy sauce, hoisin and sesame oil add a base of umami, accented by garlic chili paste, green onions, ginger, lime juice and red wine vinegar for pops upon pops of flavor. In short, this marinade is not messing around! While it’s beautiful on a perfect piece of grilled halibut, this marinade would be equally delicious on steak, chicken, pork, veggies, you name it!

So if you're partaking in Seafood Saturday like us cool kids, you have to try this recipe out. Savory, sweet, spicy and bursting with flavor, it's seriously good. 

Asian Style Grilled Halibut

Ingredients

  • 1/4 cup hoisin sauce

  • 1 tablespoon soy sauce

  • 1 teaspoon garlic chili paste, like Sambal

  • 1 teaspoon sesame oil

  • 1 teaspoon rice wine vinegar

  • 1 tablespoon lime juice

  • 1 teaspoon fresh ginger, peeled and minced

  • 3 green onions, sliced

  • 1-1 1/2 pound halibut filet

Directions

Gently place halibut filet in a large casserole dish. Whisk together hoisin, soy sauce, chili paste, sesame oil, vinegar, lime juice and ginger together and pour over halibut filet. Refrigerate and let marinate for about 30 minutes. 

Turn on grill to medium-high heat. Brush grill grates with oil and place halibut flesh side down first and grill for about 4 minutes. Flip halibut over so it's skin-side down, cover and cook for about 8 minutes. Remove from grill and garnish with green onions. Enjoy!
