Vietnamese Grilled Wings

Everyone’s talking about “hot girl summer” and I’m over here trying to get my “hot grill summer” on! Who’s with me?!

You already know I’m a huge fan of grilling things year round. But when summer hits it’s game over. All day every day, we’re grilling up delicious new recipes to keep us cool and satisfied all summer long.

My favorite grilled recipe of the moment has got to be these Vietnamese-inspired grilled wings. I adore wings in general and will eat any flavor I can get my hands on. But if I was somehow stranded on a desert island with only one flavor of chicken wings to get me through, it would have to be Asian and/or Vietnamese-inspired chicken wings.

I love Vietnamese-inspired chicken wings so much because of the umami boosters like fish sauce, lemongrass, lots of garlic and lime juice. The kiss of char these bad boys get on the grill just gives them that extra savory punch. All together, they are scrumptious and perfect for enjoying a late spring or summer dinner al fresco.

Vietnamese Grilled Wings

Ingredients

  • 2 tablespoons minced garlic (about 4 cloves)

  • Juice of 2 limes

  • 1/4 cup fish sauce

  • 2 tablespoons soy sauce

  • 1/4 cup brown sugar

  • 2 tablespoons vegetable oil

  • 2 tablespoons lemongrass paste (you can find this at most grocery stores near the fresh herbs)

  • 2-3 pounds chicken wings

  • Cilantro to garnish

Directions

In a liquid measuring cup, whisk together garlic, lime juice, fish sauce, soy sauce, brown sugar, vegetable oil and lemongrass until well combined.

Place wings in a large resealable bag and pour marinade over wings. Remove as much air as possible from the bag and seal. Massage marinade into the wings to disperse. Marinate for at least an hour and up to overnight.

Lightly oil a grill over medium low. Remove wings from the marinade and grill until cooked through and reach and internal temp of 165 degrees. Be sure to flip wings often to not burn and maintain a nice char. This process takes 20-30 minutes, so be patient! They are worth it.

Garnish with cilantro and enjoy!
