Turkey Pesto Tortilla Hack
By now it’s old news, but if you’re on TikTok and/or just a big fan of the internet, chances are you’ve seen the amazing “tortilla hack”. If somehow you are living under a rock, the tortilla hack is essentially a foolproof folding method for making wraps. Other than the ingenious folding method, what makes the tortilla hack so great is there are infinite possibilities for making the wrap/panini of your choice!
It just takes 2-3 ingredients of your choice, a tortilla and some sturdy hands. Here are a few combinations I’d try:
Ham + swiss + pineapple + spicy mayo (spicy Hawaiian)
Pepperoni + pizza sauce + mozzarella + mushrooms and/or green peppers (supreme pizza)
Roast beef + provolone + caramelized onions + horseradish mayo (French dips)
Rotisserie chicken + blue cheese dressing + buffalo sauce + lettuce (Buffalo chicken)
But today, my friends I tried what I think was a perfect combo at least for dipping my toe into the waters of the tortilla hack. Good deli turkey + provolone + lemony dressed arugula and red onion + pesto is the winning combination for me. Savory, peppery and a bit tangy, the best part is the way the cheese and pesto melt together once you sear it in the pan.

Turkey Pesto Tortilla Hack
Ingredients
Good deli turkey - go to the deli counter for this one! I love a good golden brown roasted turkey or pepper turkey
Sliced provolone cheese
Arugula
Sliced red onion
Squeeze of lemon juice
Pesto
Directions
Place your knife in the center of a tortilla and cut straight down (this is also a geometry lesson, if you didn’t know!)
You’ll basically create four quadrants of the tortilla. In the lower quadrant, nestle some turkey down. In the quadrant above the turkey, put your cheese down. In the quadrant to the right of the cheese, put your arugula down, followed by red onion slices and a squeeze of lemon juice. In the final quadrant spread some pesto.
Taking the bottom left quadrant, you’ll first fold up. You’ll do the same for the bottom right quadrant to fold up. Then you’ll fold these in half. See pictures below!
Preheat a pan over medium-high heat. Take what’s now your tortilla triangle and place into pan. Cook for about 2-3 minutes a side until cheese is melty and tortilla is golden brown.
Remove from heat and enjoy!
