Savory Mushroom Baked Brie
Is there anything more decadent or festive than cheese? Answer: no, there is not! Even more decadent, festive and indulgent than just regular cheese is ooey, gooey baked cheese, like this savory mushroom baked brie I’m delighted to share with you and yours this holiday season.
This recipe comes courtesy of my Aunt Traci who brought this cheesy tradition to our family. To us, there’s no better way to kick off a holiday meal than this savory, cheesy, buttery baked brie.
If I had you at “baked brie” and you’re already a huge fan, then I can assure you this recipe is unlike any other you’ve had before. This rendition features a savory, herby sauté of onion, garlic, mushrooms, wine, poultry seasoning and Italian seasoning which is arguably the star of the show. Of course, the real star is the cheesy baked brie that’s accentuated by more cheesy, nutty, shredded Jarlsberg cheese wrapped in a buttery, flaky puff pastry.
The end result is a real show stopper that you will want to whip up any chance you can get! Only just a tad time consuming, it’s a cinch to throw together and it’s well worth the wait.

Savory Mushroom Baked Brie
Ingredients
1 tablespoon butter
1/2 cup yellow or white onion, chopped
2 garlic cloves, minced
1/2 pound mushrooms, finely chopped
3 tablespoons dry white wine
1 tablespoon Italian seasoning
1 teaspoon poultry seasoning
1 sheet frozen puff pastry, thawed
8 oz firm brie wheel
1/4 cup shredded Jarlsberg cheese
1 egg
1 tablespoon water
Directions
In a large skillet, melt butter over medium heat. Cook onions and garlic until soft, about 3 minutes. Add mushrooms, wine, Italian seasoning and poultry seasoning and cook until all liquid evaporates and mushrooms have reduced in size, 10-15 minutes, stirring frequently. Remove from heat and set aside.
Cut 1/3 off one side of the puff pastry (it should already be lightly scored/folded into three parts to make this easy!) Roll the large pastry piece about 1/8 inch thick on a lightly floured board.
Cut brie in half horizontally. Set one piece of brie, rind down in the center of the puff pastry. Top with half of mushroom mixture followed by half of grated Jarslberg. Top with other half of brie, remaining mushroom mixture and grated Jarlsberg. Take one corner of the puff pastry and begin to enclose the cheese “tower”, pinching at the top center and layering with each piece of pastry to create a pleated “package.” Whisk together egg and water and brush package with egg wash.
Gently place package in the freezer for at least 30 minutes. When ready to bake, preheat oven to 425 degrees. Place brie package on a parchment paper lined baking sheet and bake for 30 minutes. Remove from oven and let cool for 10-15 minutes. Reduce oven temp to 350 degrees.
Meanwhile, roll out remaining pastry 1/8 inch thick on lightly floured board. Cut into triangles or fun shapes of your choosing! Place on a baking sheet and brush with egg wash and flaky sea salt. Bake for 8-10 minutes until golden brown.
Serve pastry pieces with brie package on a cutting board. Slice and serve!
