Roasted Garlic Green Beans

I present to thee, the holy grail of easy, delicious, foolproof side dishes soon to be added to your every day repertoire as it has for me. My friends, these roasted garlic green beans are everything.
I've literally started making them with every meal. Sometimes they not only perfectly pair with our main course, but they become the star completely. They're savory, crunchy and aromatic, laced with sweet, pungent garlic flavor yet not too overpowering. A true garlic lovers delight. You kind of forget you're eating a vegetable all together. Seriously.
My vegetable roasting method is tried and true. I'm certainly not claiming to have reinvented the wheel with this recipe. In fact, I would encourage using this same method on any veggie you please - broccoli, sugar snap peas, asparagus - the possibilities are endless!
Roasted Garlic Green Beans
Ingredients
2 cups fresh green beens, trimmed
2 tablespoons extra virgin olive oil
1 teaspoon Kosher salt
1/2 teaspoon black pepper
1 large clove garlic
Directions
Preheat oven to 400 degrees. Spread green beans evenly across a baking sheet. Add olive oil, salt and pepper, and toss to combine with hands. Bake for about 15 minutes, tossing halfway through.
Remove green beans from oven. Immediately, using a microplane, grate garlic over hot beans and toss to coat. Serve warm.
