Meat Cookies
Football is back!! This girl is stoked. Not only do I get to watch my UW Huskies play Saturdays, my Hawks play Sundays, and my fantasy team every other game, but I now get to plan the copious amounts of football-themed food we will consume whilst watching. Life is good.
The first Hawks regular season game this past Sunday was a morning game AKA a breakfast game (these are the things I think about, you guys). So chilis, soups, smoked meats, chips and dips were going to have to wait. This was a game for breakfast foods.
Admittedly, I can't take any credit for this recipe, but since it's a long-time family favorite I would love to share it with you all. Originally called cheddar sausage biscuits, the name Meat Cookie was coined from a family friend who put two and two together. "These are shaped like cookies...and they are chock full of meat. Let's call them....meat cookies!" Obviously.
So the first regular season "breakfast game" was made complete with a batch of these extremely easy, delicious, soul-satisfying meat cookies and a batch of spicy Bloody Mary's to wash them down. Go ahead and give these a whirl for you next tailgate or football party. They are sure to be a crowd-pleaser!
Meat Cookies
2 cups of Bisquick mix
2/3 cup of milk
1 package Jimmy Dean sage sausage
1 cup grated sharp cheddar cheese
Preheat oven to 375 degrees. In a saucepan, cook sausage, breaking into small pieces while cooking. Drain off excess fat and set aside.
Mix together Bisquick mix and milk. Add cheddar and sausage bits and combine. Drop dough onto cookie sheet into twelve loosely formed drop biscuits. Bake for 15-20 minutes. Enjoy!
