Marshmallow Brownies

If you’re a Hungry Ali fan you know that baking is not my strong suit. I mean, just take a look at the ratio of baked goods vs. non-baked goods on the site! But sometimes the occasion just calls for it. Be it for the Super Bowl, Valentine's Day or just because you feel like baking and eating something sweet, sometimes a girl's just gotta bake. 

Whenever the baking mood strikes, I like to keep it simple with classics like spicy pineapple zucchini bread or these amazing mini cheesecakes.  Of course another classic sweet treat I love whipping up is marshmallow brownies. 

OK, so I use brownies very loosely. They’re more of a…blondie? Chewy bar? Technicalities aside, one thing is for sure: they are plain delicious. They're chewy and fudgy and decadent as ever and loaded with sweetness. Starting with a batter of melted butterscotch chips and butter, the foundation is sticky and rich, as all good sweet treats should be if you ask me. And because this is dessert and you should only just go all out, they feature a healthy dose of chocolate chips, marshmallows and walnuts for crunch.

When they come out of the oven they're golden brown and smell like heaven. So you can only imagine just how glorious they taste!

Marshmallow Brownies

Ingredients

  • ​1 cup butterscotch chips

  • 1/2 cup butter - I always use salted butter in my baking for that extra salty/sweet flavor!

  • 2 eggs

  • 2/3 cup brown sugar

  • 1 1/2 cups flours

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 2 cups mini marshmallows

  • 2 cups semi sweet chocolate chips

  • 1/2 cup chopped walnuts

Directions

Preheat oven to 325 degrees. Melt butterscotch chips and butter over low heat in a medium saucepan, stirring until smooth. If the butterscotch and butter start to break, don't worry, take it off the heat and stir slowly to start incorporating them again. This will happen once the mixture cools about 10 minutes. Meanwhile, beat eggs, brown sugar and vanilla in a large bowl. Add butter mixture and mix until combined. 

Combine dry ingredients in a separate bowl. Add to batter and mix well. Fold in chocolate chips, nuts and marshmallows. Spread into a greased 13 x 9 inch pan. Bake for 30 minutes. Cool and cut into squares. Enjoy!
