I thought I had already cooked and tasted broccoli in all its glory. Until I tried something completely new and it blew me away! 

My blasted broccoli has become a family and friend favorite. To know me is to also know my blasted broccoli. For realsies. While I'll never go back to cooking broccoli any other way, I wanted to shake up the flavor profile up ever so slightly. 

Turns out, adding lemon, garlic and parmesan to my already tried and true broccoli roasting method was a smart choice indeed. If you remember from my garlic green beans, the grated garlic gives a swift punch of garlic while the broccoli is still hot. The lemon zest adds some brightness and acidity and the parmesan, well, the parmesan just makes it decadent. And is there ever anything wrong with that? 

Lemon Parmesan Broccolini

Ingredients

  • 1 bunch broccolini, or head of broccoli, cut into small florets

  • 1 tablespoon olive oil

  • 1 teaspoon Kosher salt

  • 1 teaspoon black pepper

  • Zest of one lemon

  • 4 tablespoons freshly grated Parmesan

  • 1 garlic clove, grated

Directions

Preheat oven to 400 degrees. Drizzle olive oil, salt and pepper over broccolini/broccoli and toss with fingers to evenly distribute. Bake for 15-20 minutes, until broccoli looks crispy and brown. Remove from oven and immediately sprinkle with grated garlic, lemon zest and Parmesan. Toss to combine and serve warm.
