Green Beans with Miso Butter

I don’t know about you, but I am constantly trying to find new and exciting ways to eat my veggies. Yet, it’s far too easy to just go back to the basics, because why fix what’s not broken? I’m talking about leaning on my blasted broccoli practically every night of the week or my roasted garlic green beans that are plain heavenly or going the salad route with my almond crunch salad with sesame vinaigrette.

With such solid veggie side dish recipes, why ever would I need to switch things up?

But alas, change is indeed a good thing (says the girl who naturally hates change). And to really change things up, I recently whipped up a veggie recipe that quite literally blew me away. I had a pack of white miso paste sitting in my fridge for some time, just waiting for the prime opportunity for usage. Luckily, I had some green beans on hand for the absolute perfect pairing.

This easy yet impressive veggie side dish came together in less than 10 minutes. Miso and soy sauce for a double punch of umami, Sriracha for zip and lemon for brightness and tang pair make for a bold, rich sauce to already buttery, garlicky green beans. Topped off with a sprinkle of cilantro, they are gorgeous-looking to boot!

Green Beans with Miso Butter

Ingredients

  • 1 pound fresh green beans

  • 2 tablespoons butter

  • 2 tablespoons white miso paste

  • 1 tablespoon soy sauce

  • Juice of one lemon (about 2 tablespoons)

  • 1 teaspoon Sriracha

  • 1 garlic clove

  • 1 tablespoons fresh cilantro

Directions

In a small bowl or liquid measuring cup, combine, miso paste, soy sauce, lemon juice and Sriracha. Heat butter in a skillet over medium high heat. Add green beans and sauté for 6-7 minutes, stirring occasionally. It’s quite OK if your beans get some dark, crispy bits! With a microplane, grate garlic into skillet and stir into green beans. Cook for another 1-2 minutes until garlic is fragrant.

Reduce heat to low and add miso sauce to skillet. Stir into beans until well combined then remove from heat. Garnish with chopped cilantro and enjoy!
