Bacon, Goat Cheese, Spinach and Tomato Scramble

In preparation for the holidays, Cole and I are attempting to eat a bit cleaner and avoid carbs as much as possible. We’re thinking of it as insurance for when we’re stuffing our faces full of turkey, pies, cookies and carbs for days. Balance, right? 

But I love me a good challenge so I started to think about all the ways we could low-carb our meals, starting with the most important meal of the day. When it comes to being low-carb and breakfast food, it's all about the eggs, baby. But just your average scrambled or fried eggs can get a little boring. So what better way to shake up your morning with a delicious, gourmet (and loaded) scramble?

Behold the delicious, better-than-any-stinking-carbs-I’ve-ever-tasted scramble. Complete with creamy goat cheese, nutrient-rich spinach and tomatoes and decadent pepper bacon, it's a truly satisfying start to your day. While I fully endorse this tangy, creamy and savory combination that's decadent in every way, the best part about egg scrambles is that they're very forgiving. Try it with the veggies and cheese of your choosing, or even make it meatless and skip the bacon (but why). This scramble is your oyster!

Bacon, Goat Cheese, Spinach and Tomato Scramble

Ingredients

  • 4 eggs

  • 1 tomato, diced

  • 6 strips thick-sliced pepper bacon

  • 1 cup spinach, roughly chopped

  • 1 tablespoon butter

  • 2 oz goat cheese

  • Kosher salt and pepper

Directions

Cook bacon in a large skillet over medium heat until crispy. Meanwhile, crack four eggs in a medium sized-bowl, whisk and season with salt and pepper. Remove bacon from skillet and drain on a paper-towel lined plate. Roughly chop bacon into bite-size pieces.

Drain excess bacon grease from skillet and add tomatoes to saute on medium heat until they begin to soften. Add spinach to skillet until wilted, about 2 minutes. Remove from skillet and set aside. Melt butter in skillet until foaming. Add eggs and cook, stirring frequently, until no more liquid remains. Remove from heat and gently stir in spinach, tomatoes and crumbled bacon. Serve immediately and top witih crumbled goat cheese.
