Chocolate Chip Shortbread

Do you have that one dessert you crave all the time and request for any and all occasions? For me, that’s chocolate chip shortbread. I can’t remember a birthday or celebration growing up where I wasn’t craving and requesting my all-time favorite dessert, this buttery, chocolatey and perfect chocolate chip shortbread.

This recipe is my favorite for a million reasons, but a few of them being that there are a total of six ingredients which make putting this together a breeze, they are perfect as is or pairing with vanilla ice cream for entertaining, and they are absolutely scrumptious in every way.

Simply put, these are my best and favorite baked good recipe and I just know you’ll adore them too!

Chocolate Chip Shortbread

Ingredients

  • 3/4 cup (1 1/2 sticks) butter, softened

  • 1/2 cup + 2 tablespoons sugar

  • 1 1/2 teaspoons vanilla extract

  • 1 3/4 cup flour

  • 1/2 teaspoon salt

  • 1 cup semi-sweet chocolate chips

Directions

Cream together butter, vanilla and 1/2 cup sugar with an electric mixer or standing mixer. In a separate bowl, combine flour and salt. Slowly add in dry ingredients to wet ingredients and beat until it’s a rough, crumbly mixture. Fold in chocolate chips with a spatula.

Butter two pie dishes and pour half of the batter into each dish. Firmly press mixture into the pie dish evenly to the edge. Cut into 8-10 wedges and sprinkle with remaining sugar. Bake at 350 degrees for 20 minutes. Let cool for about 20 minutes and recut into wedges. Enjoy!
