Sweet and Spicy Wings
Have I told you about my wing obsession? The obsession that started small at just your ordinary Buffalo Wild Wings, and that comes out in full force during football season? Well let me tell you, this obsession is fierce. And when it's football season and I have a Fantasy lineup to watch and my Hawks to cheer on, this girl wants wings with a side of football.
There are definitely a few favorite local wing joints I can count on when I desperately need to satisfy my wing craving. But call me crazy, when my Hawks play, the last place I want to be is in a loud, noisy bar. No, no. I prefer my football games on my couch, in sweatpants and Doug Baldwin jersey, with food and beer in hand where Iām the loudest person in the room. Go Hawks!
So we have a dilemma here. I want wings but I want to stay home. Naturally, a few Sundays ago, I decided to try my hand at making homemade wings, baked not fried. And I have to say, they turned out pretty bomb! I had a few of my best friends, and fellow Seahawks fanatics, over to be my taste testers for my first attempt of making homemade wings. They even helped with the creation of them. Not only were they wowed by how easy they were to whip up, but by how tender and yet crispy they turned out just from the oven. I was kind of amazed myself.The glaze was everything. Super simple to throw together, it's spicy but not overpowering, sweet, salty and even a little tart. It was a huge hit with the crew and for sure myself.
But the real key to these perfectly caramelized, crispy wings was the quick broil in the oven for finishing. They tasted like they could be straight from the fryer or grill. I can't recommend this step enough - even if you're tossing on a coat of your favorite BBQ or hot sauce for the final broil. With just a little bit of time and a smokin' hot oven, you too can make oven-baked, restaurant quality wings to go with your Sunday football festivities.
Sweet and Spicy Wings
Serves 6 hungry football fans!
Ingredients
4 pounds chicken wings
4 tablespoons butter, melted plus 1 stick butter
2 tablespoons vegetable oil
2 teaspoon garlic powder
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon cayenne pepper
2 tablespoons flour
1/2 cup honey
1/2 cup sriracha
2 tablespoons soy sauce
Juice of 2 limes
Cilantro, chopped
Directions
Preheat oven to 400 degrees F. In a large bowl, combine wings, butter, vegetable oil, garlic powder, cayenne and salt and pepper. Place wings onto the prepared baking sheet and bake for 30 minutes, using metal tongs to turn at halftime.To make the glaze, melt butter in a small saucepan over medium heat. Whisk in flour until lightly browned, about 1 minute. Stir in honey, Sriracha, soy sauce and lime juice. Bring to a boil; simmer until slightly thickened, about 1-2 minutes.Brush wings with glaze and broil for 3-4 minutes a side, or until crisp and crusted.Serve immediately and garnish with cilantro.
