About this time last year, I went to this little place called New York City with my best friend of 20+ years, Hannah. We went to partially celebrate her graduating from law school (because she is a bad ass) and partially because we just really wanted to take an epic trip together. And so we did! And it was amazing, to say the least.

We devoted an entire week to exploring the Big Apple. And while we accomplished a lot, I feel like we hardly scratched the surface! If you've never been to NYC and you've just heard of how big the city is, you really have no idea how gargantuan it actually is. It's incredible! Still, I'll never forget our leisurely stroll through beautiful Central Park, the emotional tour of the 911 Memorial, our trek across the Brooklyn Bridge, journey to the top of Rockefeller Center, day trip to Ellis Island, wandering through SoHo to bump into Aziz Ansari filming Master of None (for realsies), high tea at the Plaza and so much more!

But one of the main reasons I traveled to NYC (and the reason I travel most anywhere) was for the FOOD!!! You knew that was coming right?

Where do I even begin? From getting to try the infamous Shake Shack as soon as we stepped off the plane, to April Bloomfield's legendary burger at The Spotted Pig, to phenomenal dumplings in Chinatown for a whopping $1, to some seriously good falafel from a food truck (that we ate in the middle of a downpour in Times Square). I could go on and on!!

One of the more memorable food experiences of the trip though, in true millennial fashion was an exquisite avocado toast at this cafe called Chelsea Commons. While I’ve had a lot of avocado toast and it’s almost always amazing, this particular avocado toast had me dreaming for months after our trip.

I'm probably not alone here, but I'm a serious avocado lover. There's nothing I love more than just a simple piece of toast with avocado, or even a bagel with cream cheese, avocado and salt which is a personal favorite concoction. It's one of those extremely simple foods that just gets me every time. But the avocado toast I tasted in NYC is now the way I make avocado toast at home every single time because of just a few key ingredients that sing in perfect harmony. Bright lemon juice, smoky cumin, hint of warmth from chili flakes and good flaky sea salt is all it takes to make the perfect avocado toast in my book!

In just a few minutes, with these simple ingredients you can make NYC quality avocado toast. So go ahead, channel your inner millennial and whip up the best avocado toast you’ll ever taste!

Perfect Avocado Toast

Ingredients

  • 1 ripe avocado

  • Juice of one lemon

  • 1 1/2 teaspoon cumin

  • Flaky sea salt or fleur de sel

  • Crushed red pepper flakes

  • 1 tablespoon butter

  • Bread of your choice - I use Dave's bread for a healthier, everyday option but if you really want to go all out I recommend a good baguette or crusty country loaf

Directions

Heat butter over medium heat in a skillet. Lay bread down over butter and toast for about 2 minutes per side, until sides are golden brown and crisp.

Meanwhile, cut and half avocado and remove pit. Scoop out avocado and mash in a medium sized bowl. Immediately add lemon juice to prevent browning, cumin and salt. Taste for seasoning.

Add a healthy slathering of avocado mixture to bread and top with crushed red pepper flakes and salt. Enjoy!
