Peach, Prosciutto & Mozzarella Pizza
Fridays in our house mean pizza night! Because we do pizza most weeks or really as often as we can, we have nearly exhausted all of our pizza topping combinations. For the most part, if you can dream it, we’ve made it!
That is until we put peaches on a pizza. You heard right! And don’t knock it ‘til you try it!
Perfect for a ladies night and for sipping on rosé, this pizza is sweet and salty perfection. Featuring the ripest of summer peaches, creamy mozzarella and salty/smoky prosciutto.. A sprinkling of fresh basil and a drizzle of balsamic glaze complete the picture to make for one stunning ‘za.
Peach, Prosciutto & Mozzarella
Ingredients
1 store-bought pizza dough, room temperature
2 tablespoons extra virgin olive oil
1 teaspoon Kosher salt
8 oz fresh mozzarella, sliced 1/4 inch thick
3 oz prosciutto slices
1 ripe peach, sliced
1/4 cup fresh basil leaves, chopped
2 tablespoons balsamic glaze
Directions
Preheat oven to 425 degrees. Lightly oil a baking sheet and sprinkle with a small handful of cornmeal. Gently knead pizza dough until you've formed desired pizza base. We typically go the oval/square route for more of a flatbread pizza but to each their own! Drizzle olive oil evenly over surface of pizza dough and poke a few holes in the center. Sprinkle Kosher salt around the edges and bake for about 10 minutes, until just golden brown.
Top with mozzarella slices, breaking if necessary to cover the pizza area., Bake for another 5-8 minutes, until cheese is golden and bubbly. Top immediately with peach slices, prosciutto, basil and balsamic glaze. Slice and serve!
