Buffalo Chicken Dip

On this installment of "Hungry Ali makes game-day food," I get super Pinteresty. Pinteresty (adj.) - the act of obsessing over Pinterest recipes to the point where you feel the need to replicate them yourself.

If you're a Pinterest lover like I am, you won't be surprised to see my Pinteresty creation of Buffalo Chicken Dip. Pinterest is dip crazy, let me tell you - cookie dough dips, buffalo chicken dips, fruit dips, pizza dips, now the PSL dips, you name it. I roll my eyes at most of these silly concoctions, but I had to admit as my thumb ferociously scrolled through Pinterest recipes one evening, those buffalo chicken dips looked darn tasty. How could a dip that tasted just like one of my favorite game-day foods be bad??

Before I became freakishly obsessed with wings, especially during football season, I went through this weird phase where I was completely uninterested in buffalo wings. I was fully aware that there were people in this world who were crazy obsessed with buffalo wings, and I just wasn't one of them. Until I one day saw the light and returned from the dark side after visiting good ol' B-Dubs for the first time. Ever since, I haven't been able to get enough. I'm a wings addict!

So when I made some shredded buffalo chicken tacos in the slow cooker a few weeks back, and had some leftovers for the freezer, I knew exactly what was going to come of the leftovers. All it took was some cream cheese, some shredded cheese (variety here, people), some ranch and some hot sauce and BOOM. We had a cheesy, hot, melty dip to go alongside a Hawks game. It was like having the savory, tangy pleasure of a buffalo wing, without the mess! And all the flavor.

Buffalo Chicken Dip

  • 1 cup shredded chicken

  • 1 package cream cheese, softened

  • 1 cup shredded cheddar, or Colby Jack blend

  • 1/2 cup Frank's Hot Sauce

  • 1/2 cup ranch dressing

  • 2 green onions, chopped

  • 2 tablespoons blue cheese crumbles

Preheat oven to 350 degrees. Combine shredded chicken, cream cheese, ranch, hot sauce and shredded cheddar or Colby Jack blend until smooth and creamy. Place in small baking dish and bake for 15-20 minutes.Remove from oven and top with blue cheese crumbles and chopped green onions immediately. Let cool for about 5 minutes and serve with your favorite tortilla chips and/or celery and carrots for dipping (and an ice cold beer!)
