Thai Lemongrass Chicken
I'm not going to lie, I am straight-up obsessing over this recipe. The marinade alone is heavenly; savory, sweet, a tad spicy and full of umami, you could marinate a toe in it and it would taste good (though I'm recommending you go with the boneless chicken thighs). The chicken itself becomes charred from a kiss of brown sugar yet tender and flavorful as can be from one of my favorite Asian ingredients, fish sauce. A drizzle of fresh lime juice and cilantro leaves to finish off this gorgeous looking chicken just seals the deal.
Plus, like most all of my favorite recipes, it's a low-maintenance, super simple recipe to prepare. Layers upon layers of savory, fragrant and spicy Thai flavor are built from just a handful of ingredient then whisked into perfection in a bowl or measuring cup, you know, for killing two birds with one stone! Forget ordering takeout (as much as I love me some takeout), this is better. No joke!

Thai Lemongrass Chicken
Inspired by Bon Appetit's Pounded Lemongrass Chicken
Serves 4
Ingredients
8 boneless chicken thighs
2 tablespoons lemongrass paste
2 teaspoons chili garlic paste, like Sambal
2 tablespoons brown sugar
Juice of one lime, plus extra limes for serving
1/4 cup fish sauce
1 teaspoon Kosher salt
1/2 teaspoon black pepper
Cilantro for garnish (optional)
Directions
Season chicken thighs with salt and pepper. Whisk together lemongrass paste, chili garlic paste, brown sugar, lime juice and fish sauce. Place chicken thighs in a large ziploc bag or shallow dish and cover with marinade. Refrigerate for at least 30 minutes.
Heat grill over medium high heat and cook thighs for 4-5 minutes a side. Remove chicken with grill and immediately squeeze more lime juice and cilantro, if you'd like. The lime juice over the top is everything though - enjoy!
