Sunflower Crunch Chopped Salad

It's a salad that's full of flavor, texture and, let's be honest some cheese and creamy, delicious ranch. Because cheese and ranch, in my opinion, are a salad's best friend. 

I know a salad that's practically immune to causing salad fatigue. My sunflower crunch chopped salad is refreshing, creamy and, of course as the name implies, full of texture and crunch. A simple combination of crisp, chopped romaine, chopped English cucumber, crunchy sunflower seeds, loads of salty shredded mozzarella and a classic, tangy ranch create for one delicious bite that's sure to make you craving more.

It's a perfect accompaniment to any dinner or can create for a surprisingly exciting main dish with or without the addition of protein. Whatever way you slice it, this salad is sure to cure your salad fatigue!

Sunflower Crunch Chopped Salad

Ingredients

  • 1 head of romaine, chopped

  • 1/2 English cucumber, chopped into 1/4 inch chunks

  • 1/4 cup shredded Mozzarella cheese

  • 1/4 cup sunflower seeds

  • 2-4 tablespoons homemade ranch dressing

  • Salt and pepper

Directions

In a large salad bowl, layer chopped romaine, cucumber chunks, mozzarella cheese and sunflower seeds. Dress with homemade ranch and toss. Season with salt and pepper. Enjoy!
